Default SMTP Relay set up

A quick question. I read the response on this issue tacked to the top of the board and will attempt to set my e-mail up that way. However, It is unclear to me whether I can setup my e-mail to be sent from the same address, regardless of the mail server I am using. In my case, I simply want e-mails I send from home using the SMTP server of my ISP to register/show that they came from my work e-mail address so that if people respond the e-mail will get sent to my work account, and not get split into the two different accounts. So for instance, my work address of jsmith@utk.edu would show as my e-mail whther I send it from UTk or from mindspring, rather than my mindspring e-mail account.

Will the SMTP setup do this? If not, is there another way to accomplish this?
